Staying in has been hard on my cravings for different foods so I have been trying out new recipes and challenges. Today, I’m excited to share an experiment – breakfast edition! 🌞
After doing some research and looking at various recipes, I decided to try the Fluffy Pancake Recipe from Chocolates & Chai. The recipe was easy to follow and used only a few key ingredients I already had or could get.
The recipe starts out with having two different mixtures, one for the yolk mixture and another for the meringue. The key to fluffy pancakes in this recipe is whipping the egg whites and sugar just right to create the optimal fluff! As someone who does not have a lot of experience with meringue, I was eyeballing it and trying to be careful and avoid overwhipping it.
Overall, I had a bit of an accident with the first batch (burned a few, oops) but it was a fun and yummy recipe to try! I didn’t bother adding whipped cream or honey because the pancakes were sweet enough on their own for me.
A Messy Successful First Attempt
By the time I was done I was hungry so excuse the messy plating. 😂 I give myself an A for effort here. The pancakes tasted better than they looked at least. If you try this recipe, don’t make the same mistakes I made: 1) DO make extra batter and 2) DO lower the heat so the pancakes don’t burn! 🔥 I recommend trying this out yourself if you happen to be craving something different for breakfast. 😊
