After work, I’m usually tired, hungry, and definitely NOT in the mood to cook. Lucky for me, I discovered the most DELICIOUS (and super easy) fettuccine Alfredo recipe known to the modern world. It was so good I ended up making it twice in a row for dinner! This easy, tasty dish is a must try for every newbie chef.
I have a pretty busy lifestyle so any little bit of extra time (and bites of delicious food) helps. I was doing a Google search of “quick dinner recipes”, “easy dinner ideas”, etc. and…actually got zero viable options. They were either pretty intense recipes (quick for the average chef but not for your basic girl here) or didn’t really seem all that interesting. While I like to try new foods, based on prior experience I’ve come to realize it’s not the greatest idea to experiment when hungry.
Lo and behold, M (the boyfriend) pointed out that maybe we should look at the ingredients we already had. Turns out, we had some fettuccine. So, I googled “fettucine recipes” and found this gem, ERINMARIE’s To Die For Fettuccine Alfredo. My goodness, it is AMAZING.

For once, following the recipe gave me the exact results I wanted – a delicious homemade dinner.
It took M and I about 30 minutes to make it. We also added chicken tenderloins to it. In addition to the original recipe, we lightly seasoned chicken tenderloins with salt, pepper, and a little bit of chicken seasoning. We fried it up in another pan and added it to the pasta last. As you can see I was way too hungry to wait for plating to take photos.
It was so good, I made it again for dinner twice in the same week! This time, I decided to experiment and fry up some salmon and add it to the pasta. Tip: If you find that you tend to over season the fish (like I did), slightly under season the pasta so that eating it together, tastes will balance it out. It also works vice versa.
